My good friend sent me this brownie recipe and it is one worth sharing! Special thank you to Karina Newmarch and Juice Plus+
Chocolate Zucchini Brownies
Ingredients:
- ½ cup peeled and finely grated zucchini
- 1/3 cup coconut yoghurt
- 1 cup and 2 tablespoons water
- 2 teaspoons pure vanilla extract
- 3 tablespoons flaxseed meal
- ½ cup and 2 tablespoons melted coconut oil
- ¾ cup raw cacao powder (or Juice+ Complete Chocolate Protein)
- 1 cup coconut flour
- ½ teaspoon sea salt
- ½ teaspoon baking powder
- ½ cup coconut sugar
- ½ cup mini dark chocolate chips or cocoa nibs to decorate
Directions:
- Preheat over to 180 degrees Celsius
- Line a slice tin with greaseproof paper
- Mix the first 6 ingredients and let sit for 5 minutes
- Combine all other ingredients in a separate bowl and stir well
- Pour wet ingredients into dry
- Stir until evenly mixed then pour in to slice tin
- Decorate with chocolate chips or cocoa nibs
- Bake 20 minutes then pat down hard with a spatula to make the brownies denser
- Allow to cool before cutting into squares
